The Sacred Ritual of Dum

Unlike boiling or steaming, Dum is an act of containment. We seal our heavy copper 'degh' with fresh dough, trapping the aromatic steam inside. This creates an intense pressure that forces the essence of whole cloves, cardamom, and saffron deep into each grain of long-grain Basmati.
